Director of Food Services/Executive Chef
As our Executive Chef of 19 years, Jake has been immersed in our community as a longtime resident of Sparta including Lake Mohawk. A native of Spain, he is well versed in numerous old-world culinary techniques as well as a variety of current and trending cuisines. He started his career at the young age of 14, Jake has worked in all aspects of the industry from classic French and high-end pastry arts to boardwalk seafood fares. Over the years, he has further educated himself by not only attending the Culinary Arts Institute, but also by teaching numerous courses at his alma mater. A creative, inventive and disciplined professional, he is continuously experimenting with new ideas, techniques and locally available fares to provide the most exciting and mouth-watering dining experience here at Lake Mohawk Country Club.
Boardwalk Chef de Cuisine
Sean is enthusiastically preparing for another exciting year as the Sous Chef of the Boardwalk Club Restaurant. Having grown up in Sparta, he has been involved at LMCC from a young age. Starting his career here as a dishwasher in the late nineties, he fell in love with the culinary profession and its offerings for a creative and inventive career. As Sean moved forward, he relocated to Virginia to pursue his degree in psychology as well as broaden his culinary experience. Upon returning to the area, he has worked at a variety of establishments, including pizzerias, the fast-paced Francesca's, Lake Mohawk Golf Club and numerous other local venues. As he continues his profession at Lake Mohawk Country Club, Sean has brought with him years of experience including but not limited to classical French, Italian and ongoing culinary trends.
Catering Sous Chef
A graduate of the Morris County Culinary Arts program, Francis has held the position of Banquet Sous`Chef for the past 14 years. A native of India, he has brought numerous Asian and southern European`influences with him that shine through in his flavorful cooking and eye-catching presentation. Wellversed`in all manners of restaurant service, Francis has experience ranging from venues as small as local`deli's and private catering to working for the Westin Hotel of Morristown. Upon settling in Sparta and a`career at Lake Mohawk Country Club, his dedication along with consistent and thoughtful culinary`creations are something you have hopefully experienced when attending our member catered events.
As an integral part of our culinary team, Alex brings with him a wealth of knowledge based on years of experience in the culinary field. A graduate with honors from the Art Institute of New York City with a culinary arts/restaurant management degree, he has come a long way since starting his career as a dishwasher at Sheridans in Andover NJ. Alex has worked at a variety of fine dining establishments throughout the country along his journey, such as the Four Seasons Hotel in Washington D.C., W.D. 50's and Pastis (a 2 star French bistro) in Manhattan and Restaurant LaTour in NJ along with numerous others. In addition, he has also been invited to and attended two James Beard House Foundations, been a part of the team that hosted three New Jersey Food and Wine Fests and has worked with the likes of Top Chef Masters winner Wylie Dufresne and Iron Chef Marc Forgione. Alex has brought an extraordinary variety of experience with him to LMCC, showcased in his French, Italian and Nuevo American cuisines. Keep an eye out for him throughout the season as he is a prominent and important part of the Boardwalk Club Restaurant team.
Boardwalk Club Restaurant Assistant Manager/Entertainment Manager
David is true believer in family and community values. Dave resides in Vernon, New Jersey, where during his free time his hobbies include fishing, running, playing sports, and avidly watching them. After graduating from Vernon Township High School, and earning his Associates degree, he continued his efforts within the food and beverage industry gaining nearly 12 years of experience encompassing all of NJ (North and South). If Dave looks familiar to you it is probably because he spent the last 3 years at the Homestead right in our back yard. Working and becoming acquainted with knowledgeable people within the community and different restaurants has helped Dave become the dedicated and determined person he is today.
